The Cooking Yogi
I love to cook. Like, really love to cook. If you follow me on social media, I’m sure you’ve noticed I’m constantly whipping stuff up in the kitchen. There are only a few restaurants to choose from in our small town of Woodstock, Vermont. Because of this, we eat at home more often than we go out. Truth be told, I prefer it that way, as it’s easier to cook healthy food than it is to find healthy options on restaurant menus.
My partner Matt is vegan. I consider myself to be a flexitarian - predominantly vegan who occasionally eats eggs, cheese, and meat. I’ve tried an entirely vegan diet in the past and it didn’t work for my body; I felt depleted and sluggish. I strongly believe in the benefits of eating plant based, but everyone is different. There is no such thing as the “one size fits all” diet. However, there is tons of scientific research supporting the health benefits of a diet high in fruits and veggies and low in animal products. I think it’s important to do some research and to eat foods that nourish and heal our body.
If you’re interested in trying a plant based diet, there are so many wonderful vegan and vegetarian cookbooks to choose from; the days of bland vegan food are gone! Here are a few of my favorite food bloggers and recipes that I LOVE! You can follow them on Instagram and visit their blogs daily for the newest cooking recipes, tips, and tricks. And the best part? THEY’RE ALL VEGETARIAN AND VEGAN! Enjoy.
I honestly cannot rave enough about Minimalist Baker! I'm obsessed. Dana and her husband John are based out of Portland, Oregon and started their food blog in 2012. Most of the recipes are vegan, gluten free, and insanely delicious. In 2016 they released Minimalist Baker's Everyday Cooking, 31 Meals Cookbook... It should be a staple in every kitchen. Here are a few of my favorite recipes!
I mean, seriously... This photo says it all! How adorable is Erin Ireland and her sweet dog Effie??? She's also new mama to gorgeous baby Roen, who overloads Erin's Instagram feed with cuteness. Now, let's talk about the recipes! So good, so easy, all vegan. What started out as baking banana bread for friends has turned Erin into a much sought after food blogger. She even has her own TedX talk! Check out my favorites...
Matt and I LOVE Rich Roll and his beautiful wife Julie Piatt! Matt listens to Rich's podcast every week. Not only is Rich an ultra-endurance vegan athlete, he's an author, public speaker, and founder of the Rich Roll Podcast. Julie is a plant-based chef, meditation guide, yoga teacher, and singer. Talk about multi-talented, these two! Their cookbook The Plantpower Way is a comprehensive vegan cooking resource. Unfortunately, their recipes are unavailable online, so you'll have to buy this one. But trust me, it's so worth it. The vegan lasagna is a must! Check out this inspiring video if you need more convincing...
